Apparently the most stressful activity that people engage in throughout their life time is picking out their first home. However according to the behaviour of some brides to be, planning a wedding appears to be almost on a par. Amidst the sea of cold feet and endless decision making, the choice of which wedding cake to be purchased needs to be made. This can be difficult enough considering the wealth of options and the shocking cost of some of the more elaborate designs. And on top of that you then need to decide upon the type of flowers for a wedding cake that you wish to adorn your chosen cake with. The main decision that needs to be made is whether or not you want fresh flowers or fake flowers for a wedding cake. I will now outline the options that are available with both.

Fake Flowers for a Wedding Cake

The first option within the completely fake flowers category is to use royal icing. The substance tastes basically like candy and is primarily made of butter cream. It generally doesn't allow for designs that are all that complex but it can easily be used to create daisies and roses and for some brides this is all that is required. Another option is to use gum paste. This has the advantage that it becomes incredibly hard when it sets and therefore any flowers that are modelled using it can be made incredibly detailed. The disadvantage however is that though technically edible and made up largely of sugar, it is certainly not something that your guests will enjoy eating as it can taste incredibly bland. Therefore if you want edible flowers for a wedding cake, choose royal icing. But if you want detailed flowers for a wedding cake, choose gum paste.

Fresh Flowers for a Wedding Cake

There is obviously always going to be something special about fresh flowers for a wedding cake. A certain level of glamour is achieved that fake flowers will never really be able to match. Some wedding cakes include petals simply dropped randomly on the top, while others have frozen fresh flowers carefully attached to the side with gum paste. The advantage of fresh flowers is that they look so much better than the fake variety, the disadvantage of course is that they do not taste all that good. The taste can however be improved by having them sugared. This process simply involves covering them gently with egg whites before coating them with very fine sugar. It should go without saying that this should only be done to flowers that are safe to eat unless you want very angry guests.

In conclusion, both fresh and fake flowers for a wedding cake are indeed a bit of a trend right now. The choice between the two is basically a matter of personal preference. Some couples like the idea of edible flowers for a wedding cake made of icing, while others think that only fresh flowers will do the trick. Many couples of course choose to have both.
